Lezlee Cuda, Downeast Deli, Prospect Harbor, ME.
I bought the business and the name in 2008. The name was working and I decided not to change it. I did change the menu a bit. I added some lighter foods like some vegetarian and vegan items. I developed a “Food to Go” case where I make salads, hearty, healthy soups, lasagnas, quiches and some other foods that people can come in a grab, take home to warm up or have us warm them up here. They are more healthy items. I like to say that we have “Food for the people-not just pizzas”. Although we do have some very good pizzas and subs as well. I have added 6 different types of salads and would like to add crepes filled with a variety of choices.
I have a strong interest in healthy food and nutrition. My Grandfather was a Nutritionist. He often would throw open the windows and do calestetics, he fasted once a week. He was a British seaman and grew up on a ship. In that circumstance especially they needed to stay healthy. My mother was enthused and educated about nutrition and we were raised that way as well. I moved here from California, the whole area is very health conscious. My background was nursing as well as a lifelong interest in food and cooking. In spite of wanting to offer healthy food I also wanted to appreciate the culture of a place and continue to offer products that people enjoy and want. For instance, whoopie pies. This is an important cultural item and I have kept them but have worked hard to perfect the recipe and offer varieties as well. I like to make stuff that everyone likes. I have perfected an ice cream sandwich and am very proud of it. During the month of August I am promoting this sandwich through Schoodic Creates Facebook page with a coupon for approx. 1/2 price.
I have received glowing responses about my chowders and some of the other items that I have added. It is important to keep what people like and want and to be true to myself by adding more hearty, healthy products to the menu. I have found that people appreciate both of those aspects of this business.

I promote mostly through word of mouth. Ben at Oceanside meadows has been a bigsupporter and has helped me a great deal by sending people here and offering ideas.
The most exciting part of owning a business here on the peninsula is the people. Everybody has a different point of view and they share it with me. They love my food and I love cooking for this community. I love to work and live amongst nature and this location allows me to enjoy nature every day.
